Lita's Spicy Black Beans with Onion and Bacon

"Lita made very little money early in her career and she mastered the economical yet sassy dish while living in Mexico City. This dish was rumored to be in the catering table during the filming on Mel Brooks's classic film Blazing Saddles. True or not, take it from me this one is a winner. Like Lita, this dish is sassy . . . and unforgettable."

Ingredients:
1/4 pound bacon, chopped
1 large onion, peeled and chopped
2 large garlic cloves, peeled and chopped
2 1/2 tablespoons chili power
1 (4-ounce) cans black beans, drained and rinsed
2 teaspoons dried oregano
1 (16-ounce) can diced, peeled tomatoes, undried
Salt to taste
Freshly ground black pepper to taste


Instructions:
1) Cook the bacon in a large, heavy saucepan over medium heat until light brown, about 10 minutes.

2) Add the onion and garlic and
saute until the onion is translucent, about 5 minutes.

3) Add all the remaining
ingredient. Simmer until the mixture is thick, stirring frequently, about 12 minutes.

4) Season with salt & pepper.

Makes 4 servings
